The Dewazakura brewery has been operational since the late 1800s, and remains one of the most historic Japanese breweries to this day.
The classification, 'daiginjo' refers to how much of the rice is polished away before brewing, which in this case, is more than 50% of the outer layer. This sake has a gentle malty aroma and is super clean on the palate — great with lighter dishes or even as an aperitif! We loved the lightness of this sake, and how it pairs with practically anything! Whether it's something for yourself or for a loved one back home, we are sure that this is a great sake to purchase.
Bonus: If you're interested in this brewery, the company has opened an art museum near Sendai, showcasing some of the porcelains, and handicrafts that were used in its original forms.
